Kosher for Pesach Double Chocolate Muffins Brownies

We had people coming over during Passover (Pesach) and my wife wanted to make something sweet. The no flour no rising agent thing posed some challenges but she came up with this recipe. It stunned us all. Yum.

Ingredients
  1. 150 grams unsalted butter, softened
  2. 175 grams dark chocolate, broken into pieces
  3. 3 large eggs
  4. 185 grams caster sugar
  5. 1 teaspoon vanilla extract
  6. 125 grams almond flour
  7. 60 grams milk chocolate in 12 chunks (consider mini-easter eggs)
Instructions
  1. Preheat oven to 180º C, fan 160º C
  2. Grease a 12 hole muffin tray
  3. Melt dark chocolate with butter, stir until smooth, and cool for 5 minutes
  4. Mix eggs, sugar and vanilla extract in a large bowl
  5. Whisk until frothy
  6. Gently mix the melted chocolate into the egg mixture
  7. Add the almond flour
  8. Fold together the almond flour and chocolate-egg mixture
  9. Divide mixture evenly between the 12 muffin tray holes
  10. Bake at 180º C, fan 160º C, for 12 minutes
  11. Remove tray from the oven
  12. Top each part-baked brownie with a 5 gram lump of milk chocolate (or mini-egg)
  13. Press milk chocolate down gently
  14. Bake for a further 5 minutes until the milk chocolate has started to soften and brownies are just firm to the touch
  15. Remove tray from oven and leave brownies to cool for about 10 minutes
  16. Transfer brownies to a wire rack
  17. Eat warm or cold
